Description
La Pavoni lever machines built after 2000 use a 51.5mm basket, half a millimeter wider than the common 51mm — and that half millimeter matters. A 51mm tamper leaves an uncompressed ring at the rim, water finds it, and the shot runs thin no matter how carefully you ground. This tamper is machined for that basket specifically. The base fills it to the wall, so the puck is compressed across its full surface rather than in the middle only. Pressure is handled by a 30LB calibrated spring that compresses to one exact load and clicks when it arrives. You press until you hear it, then stop — same tamp whether it is the first shot of the day or the fifth. A spare 20LB spring is included for lighter roasts, and the swap takes seconds without tools. The flat stainless base squares itself against the basket without wrist correction, so the bed sits level and water passes through it evenly instead of finding one fast side. The handle is solid walnut, hand-finished, with grain that darkens with use and a weight that balances rather than tires. Fits La Pavoni Europiccola, Professional and Stradivari from the Millennium series onward. Pre-2000 machines use a smaller basket and need a different size.
